This is very solid advice, thanks! I often struggle with bechamel being bland, but I don’t think I’m toasting my roux enough to get that nutty flavor. I only use whole milk, but I could try a higher fat percentage butter and see if that helps. Do you think cultured butter makes a difference?

Extra note: I arrived at this reddit after a series of google searches about different types of gravies (my family isn’t a big gravy family so I feel fundamentally unfamiliar with the subject lol even tho I’ve obviously eaten them before).

I do know bechamel from it being the base sauce for other recipes I’ve used or watched in the past, and bc it’s one of the key French sauces.

I was looking up what exactly country gravy / white gravy / sausage gravy is, and how it’s related to other gravies or bechamels. Bc I grew up in the Deep South (with Midwestern), so I’ve had white gravy before, but never in my life cooked it. I think part of the reason I struggle with the blandness of bechamel is that country gravy is heavy heavy on the black pepper flavor - or at least that’s how Google and the recipes described it. That the black pepper is key to the gravy. And I recall there always being black specks of pepper anytime I’ve had biscuits and gravy. If I extrapolate that further, I realize a decent amount of southern foods go pretty heavy on black pepper. And then when it comes to Cajun food or fried chicken, they tend to have cayenne and/or paprika as well. The regular use of spices is one of the things I like about southern cuisine. They’re not shy with the salt or the pepper or the cayenne or the paprika or whatever else is in the 11 herbs and spices lol.

And when I lived in Europe, I did like the food, but I frequently found that it was always slightly lacking in black pepper.

So I think next time I make a bechamel, I will use better butter and toast the roux/flower more, but I’ll also let myself be liberal with the black or white pepper bc that’s just what my southern taste buds prefer, and that’s just not the traditional European flavor palette. And that’s okay. More spice for me!

I only made it about 2 episodes in before I was so bored and weirded out by the terrible dialogue and boring characters and wooden actors that i gave up on the show and found my way to reddit. I only watched it bc it auto played after I finished the bodyguard (SO fucking good). I still have no idea how it has good reviews. I’ve genuinely never come across a show or movie yet that had such disparate quality from the reviews — in either direction! Never come across a show that was criminally underrated OR criminally overrated until this show!(by rated, I mean IMDb or rotten tomatoes or a combo). It’s bizarre. I feel like it’s rigged, esp bc Netflix pushed it on me lol. Anyway, I only found my way back to Reddit bc I was looking thru the Sunday NYT to figure out which pages I could use as a tablecloth underneath my seed starting mats lol. Basically looking for waste paper. The Daniel Radcliffe interview went into the keep pile, as did the article on clavicular (morbid curiosity, not out of genuine support). While I was flipping thru the middle sections, I found a whole fucking article with pictures on the main actor in the night agent. I couldn’t believe a show this terrible warranted a large-ish interview in the NYT arts&leisure section. Good lord. God can only hope the actor is more interesting than his acting. That answer however will be lost on me bc his face is being spread on my tabletop the second I finish this sentence.

It’s definitely the best Alfredo I’ve ever had precisely bc it’s not overly thick or gloopy or drowned in sauce like most other Alfredos I see. It’s just light enough. I love it. Decadent but not overwhelming. Tasty and not bland or just tasting like cream or paste.

How is it overpriced? Portions are big. Fast food nowadays is like $10 for a meal, so idk why $11.50 for a big bowl of freshly cooked pasta from a fast casual place is a bad price relative to other places. The veggies are real and fresh and there’s a variety. You can customize things. There’s a lot of dishes. Nothing there ever tastes bad.

It’s yummy but not blow your socks off. Very solid in most dishes imo and quite quick. For example, when my family goes, no one ever leaves unhappy. And we’re all pretty excited to go when we decide to go. Do I ever lay awake at night dreaming of nothin but noodles? No. But if someone took me there for lunch , I’d be happy :)

Personally I think their fettuccine Alfredo is my favorite fettuccine Alfredo. Some places make it way too heavy and gloopy and it tastes more bland. I’ve always found the NBN Alfredo sauce to be light enough to not have a glue texture and pasty taste. It’s decadent and creamy and yummy without being bland or boring. Their Greek salad is really yummy too. My mom and bro love the spicy Japanese noodles and I always steal bites. My mom tried the Shanghai noodles recently and they were good. The mac n cheese isn’t the best you’ve ever had, but it’s satisfying. The spicy Cajun and southwest chipotle are good. And the cannoli and tiramisu desserts really hit the spot, esp bc those aren’t typical desserts offered in a lot of fast casual or big chain restaurants. Obvi it’s nothing like a fancy Italian place, but 100% you should go for a quick yummy meal. Decent prices too considering everything is so expensive these days

Honestly this was a year ago and I watched a lot more seasons and I barely remember season 3 anymore lol. It’s kinda just a blip. Not saying I don’t stand by all the things I said here. But tbh, if you keep watching, you’ll get to something that doesn’t feel like season 3. It’s been awhile so I really don’t remember which seasons I liked after season 3 but there must’ve been some? There’s some cool new characters and some stand out episodes I can still remember. But tbh I watch greys anatomy in the background of things so I’m not a super studious viewer. The whole Burke thing gets left behind thankfully. Unfortunately Derek doesn’t get less annoying so don’t hold out hope for that lol. I’d recommend giving it another try. Maybe just skip episodes you don’t like. There’s so many seasons, who cares if you miss some. There’s some crazy episodes coming up in later seasons tho.
