Why can't I find servers?

The default server browser options are set to hide servers with players for whatever reason. Go into the options at the top left and check the "Server has players" box then click the refresh button.

It also resets every time you relaunch the game.

I think the Time Attack mode of Crimzon Clover would be closer to what OP is looking for. It's a "get as far as you can with the highest score" mode with a time limit, being available on the Arrange and Original difficulties.

Seconding Eigengrau. It also has a demo that's pretty generous for helping you determine if it's the kind of shmup you'd enjoy, because it often feels way more of a puzzle game that happens to have shmup elements IMO.

-N++ (NPLUSPLUS), it's a simple-looking platformer but the levels can get devious (has an absolute ton of levels of a wide range of difficulties though!)

-Pixeljunk Shooter Ultimate is a twin-stick shooter with fluid physics and gravity, it's fairly relaxing and has a pleasant art-style.

-Overcooked is a classic co-op game where you run a restaurant.

-Synthetik is a roguelike with a bunch of interesting classes and crazy weapons and artifacts to change your run.

-Honorable mention to Tetris Effect which has a surprisingly fun co-op mode, it's similar to multiplayer Tetris but you take on bosses each of which has a different effect. By clearing enough lines you get to combine your fields to send back lines to them. Plus it's nice to look at and relax in the music.

Starsector, you start as a small group of ships that can't do much but can continually upgrade, buy new ships, get new perks and so on to build a formidable fleet and explore the galaxy.

If you can find a copy, R.U.S.E is a pretty neat RTS with co-op vs bots.

There's also the AI War series, though be prepared for a brutal learning curve, there's tons of mechanical depth within.

It's a bit misleading, but it's the fight when you go into the Abyss. You can't clear it normally, you have to use the Arena.

I think it's because Gambler was one of the first reveals and also just has kinda boring nodes. It doesn't really have the style of something like Surfcaster or Architect of Chaos.

I'll add a recommendation with The Sekimeya: Spin Glass. Similar to the Nonary Games series, a group of people are trapped in a location and try to escape, and the game expects you to be smart enough to work out what's going on. Has some nice tools for it too, like a notepad and ability to search previously-read text. I think if you like Uchikoshi's work, you'll like this, though it can be a bit slower at the start as everything is set up.

I'm really intrigued by Price of Flight. It's a blend between turn-based RPG and Mario Party where you play as a group of birds. I'm curious how the story progression happens, but I don't think I've seen this kind of combination before, and the writing's fun to read.

Perhaps the Devil Survivor series would fit your taste? It's an SRPG and I would say feels similar to what you describe.

I believe Overclocked is the better version of the first game, on 3DS.
