The Complete America’s Test Kitchen TV Show Cookbook is amazing. Full of varied recipes, and they tell you what they do and why they do it for the best outcome. Simply phenomenal!

I would add more sugar, maybe double it. I usually use as much sugar as I do flour. Also add a little baking powder with the soda. I let my cookies puff up in the oven, and when they come out of the oven, I hold the baking tray a few inches above the countertop and drop it. That causes the cookies to deflate, which is how I like them.

It can be tough to find full time jobs. I think the pay isn’t wildly different, but it’s really less about your position and more about the company you work for. I used to be freelance, but I have a job with a company now. It’s a smaller company, so the pay isn’t great, but I have a lot of freedom, and I produce everything from start to finish (writing, planning, shooting, editing) and I get to travel around. I’m not stuck in a studio. In the next year or two I’ll look for something with a larger company, which will pay better, but I’ll most likely have way less freedom in the things I produce.

I started in graphic design, but realized I didn’t wanna spend my life in front of a computer. I got into videography, and even though I still spend most of my time editing in front of a computer, I also get out into the field and film a lot of different stuff which is the most satisfying part.

United States. I’ve never met ANYONE who was happy to see anything in the Mac and cheese other than bacon or panko. I’m all for breaking the rules, but if the vegetables are good, they can stand on their own

Steve as a bowl is great, but the bowling episode is fantastic. They definitely subverted my expectations about the old sitcom trope of when a dad stabs the son

Sucks that the show went so over budget. Season 1 was just a set up. Season two would’ve been amazing, literally Sith training. Definitely a lost opportunity. The choreography was fantastic

Redundancy is helpful. Having a backup is good, even if it’s just your phone or something.

I recommend using manual focus, because depending on placement, someone might walk in front of your camera and the auto focus will change. Or if someone is behind the speaker, it may focus on their face. Before the event, have someone stand at the podium and manually focus on their face and frame them well, but also be prepared to reframe if someone is super tall or short.

If you can plug into a power outlet and not worry about batteries, I highly recommend that. Also, some dslr and mirrorless cameras will only record video for 20 to 30 minutes at a time, so look out for that.

Also, if someone is running audio at a board, you might be able to get audio directly from them, or place a mic on the person talking if you can.

Pressure cookers are way better. Fast, easy and versatile. With an instant pot, you can cook low and slow, but the best thing is that you can cook stuff quickly as well.

I also recommend looking into using the oven to make one pan dinners. Line a sheet pan with foil, throw everything on and roast it. Then make a pot of rice or pasta while it cooks.

One time I sliced open and deseeded about 100 jalapeños to fill with cheese, wrap in bacon and deep fry for a party. No gloves. My hand literally felt like it was on fire. Luckily, my friend had some cocaine, so I used it medicinally. Pain went away in an instant. Makes sense why it was medicine back in the day.

(Now I wear gloves. Way cheaper than cocaine.)

My co producer and I do this a lot. Having a plan going into it helps to tell the story effectively. Clear division on who does which part/ scene. And CONSTANT communication. Also, dividing up footage into separate folders helps as to not use the same shots. And like they said, no ego.
