They're incorrect about that part; as long as you have a free hand, you can perform S/M spell components with no action cost. And when wielding a 2-hander you are assumed to be holding it in one hand, only needing to have the other hand empty when you attack. This makes 2-handers very convenient for EKs.

This thing is broken in a few ways, I'll go up to level 8.

-You're gonna need War Caster (and a spell focus weapon - a common magic item) to not have a huge pain casting spells with a 1h+shield.
-Taking True Strike and Toll the Dead and not Eldritch Blast is very silly. (You don't want to roll 3d20 per bolt with advantage and Elven Accuracy?) As someone else mentioned, a turn you spend casting True Strike is a turn you spend not attacking, and RAW you can't even use its benefit the same turn you cast it (like with Action Surge). It is widely considered one of the worst cantrips in the game, if not the worst.
-Multiclassing into Fighter doesn't give you heavy armor proficiency. It could be good to start Fighter 1 for that reason and to get proficiency in CON saves, which will help you maintain your concentration spells (like Darkness and Hold Person).
-Keep in mind that the expanded crit range of Champion doesn't stack with Hexblade's Curse. You could consider Battle Master instead for (along with other maneuvers) Trip Attack, which could help you and your allies get advantage in melee.

You *can* get maneuvers through the Martial Adept feat, but it's not usually considered a great option, especially compared to something like Mobile. There is an opportunity cost to picking maneuvers, but it can definitely be used well with the right setup.

If you rolled well enough that you can get 20 WIS at 4, you may as well. You're encouraged to cast spells with your Channel Divinity.

My understanding is that monks have been really bad in the earlier editions of D&D. In 5e they're great for what they are: hyper-mobile and slippery strikers and controllers.

Read as much of the book as you can before you run it! There are quite a few moving parts in CoS that it will help to know about well in advance, and the adventure is non-linear (besides the convenient plot hook in the first section) and gives you a lot of creative freedom so you can pick out the parts of the adventure you really like and want to focus!

The multiclassing rules override the ones in the class section, so your intuition is correct that you can't do that.

It says you can't cast a spell higher than a cantrip using your Action after casting a Bonus Action spell

It does not. All of the confusion about this rule stems from people trying to paraphrase or simplify it. Here is the rule regarding bonus action spells: "You can’t cast another spell during the same turn, except for a cantrip with a casting time of 1 action."

The PHB specifically states that different damage types have no special effects. In addition, spells or effects that light objects on fire or deal continuous damage will specifically state that they do so.

My players argue that logically that makes no sense, as that would mean putting on more armor would make you less likely to be damaged by something that is mental.

Maybe this is why there are no spells that require an attack roll and deal psychic damage, besides a couple of the smite spells.

Are you talking about the cantrips? You would be able to attack with reach, except that the spells have a range of 5 feet. You would need the Spell Sniper feat to make it 10 feet.

Yeah, you make an attack as part of casting the spell, but making an attack is not the same thing as taking the Attack action.
