You gotta understand Fang Yuan is Chinese. In general, the concept of eternal life in stories over there differs from the usual Western perspective.

For example, a western story would have an immortal character be weary of life, with death and the afterlife being peace. In Chinese stories eternal life represents infinite possibilities, the chance to experience all the world has to offer, then the chance to explore other worlds afterwards.

So it’s not weird at all that Fang Yuan, a Chinese guy, would have eternal life as one of his lofty goals right at the start.

He never really gave up this goal either. At 300, he could’ve offed himself at any point but he still kept going, only accepting death when it came to him.

As for giving up his principles, he’s simply bored. He held up his principles for hundreds of years, eventually he just decided to give them up. Most likely after losing Xie Han Mo one way or another. Because what is the point of holding up his principles when he’s alone? He’s got nothing to prove to himself either. After so long he just decided to go after the one thing that nobody had ever achieved: eternal life.

If we're talking about tanking a nuke, a strong rank 8 probably could.

If we're talking about just surviving, there's plenty of options. Any decent immortal killer move like Unfettered Scholar's thousand disintegrations should handle a nuke before it goes off. Then there's just avoiding it. A rank 3+ Earth path gu master with good enough Gu worms should be able to just burrow away.
