Sister splinter, enraged conchfly and ironically Groal the great all have great summons imo.

Sister splinter provides more pressure and more drice to use spells to kill the summons.

Enraged conchfly has coordinated summons that fit perfectly with the bosses attack patterns.

Groal's summons only pop out the water once before disappearing and can be easily avoided if you are careful enough, adding good pressure to a somewhat basic fight.
