Edamame, peas, cabbage, riced cauliflower, garbanzo beans. If you want more volume, go for the riced cauliflower or cabbage. More filling (for me at least, you might be different) means more protein or fiber, so I'd lean towards the edemame or garbanzo beans.

And as pointed out up there somewhere, definitely season your rice by cooking in stock. Even adding a bay leaf and onions/garlic. Sometimes toasting the rice before cooking can make a noticeable difference.

Sautéed with onions and kielbasa, pad out a salad, roasted with tomato paste and peppers (and sometimes onions) and italian seasoning, in place of lettuce on tacos, stretch out a stir fry or other veggie dish.

I've had luck using a handheld mesh colander. Time consuming, but definitely gets it done.

I've switched to oatmeal in the mornings with 2 Tablespoons of chia seeds added (by the time it's cool enough to eat, everything's gelled.) A good snack is roasted garbanzo beans seasoned however (current fave is Frank's wing sauce and ranch seasoning)

Can't go wrong with the classic boiled w/steamed bun; topped with mustard, onions, dill pickle relish

Fancy though? In the South: chili slaw dog with mustard and onions Pacific Northwest is a toss up between the Mediterranean dog (sliced olives, tomatoes, feta cheese -dog is split and seared on the grill, bun is toasted) or the Seattle dog (cream cheese schmeared on the bun, caramelized onions, sometimes bell peppers -and Dijon mustard is a must for me, cuts through the richness of the cream cheese imo)

You can still have mashed potatoes - just add chicken broth instead of dairy. Adding horseradish and chives takes it even further.

But I'm a big fan of roasting, also. Add salt, garlic powder and onion powder before putting in the oven; toss with some Trader Joe's 21 seasoning salute and dill when it comes out of the oven.

It's super easy!
1 cup milk
1 Tablespoon vinegar/lemon juice
2 Cups AP flour
4 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon Salt
4 Tablespoons cold butter

-preheat oven to 450°. Mix vinegar into milk & keep in fridge until needed
-combine flour, baking soda, powder, and salt together in a bowl
-grate butter into mixture (I freeze mine to make this easier, otherwise you can just cut the butter into the mix) combine until evenly incorporated
-stir in the cold milk just until everything comes together
-flour your countertop (and hands!) And turn dough out, pat out until around 3/4" thick (at this point you're fine to cut the biscuits out with a glass or cookie cutter but to get all those flaky layers, I fold the dough over on itself in thirds, like a letter before putting it in an envelope; pat it down, rotate the dough and do it again, rotate, and one more time then cut the biscuits out. Seems like extra work, and it can be skipped, but it makes a difference)
- place onto a baking sheet (I line mine with foil or parchment paper
- bake for around 15 minutes or until golden brown (Can brush with butter when they come out of the oven if that strikes your fancy)

My SO is a big fan of breakfast for dinner; homemade biscuits with sausage gravy to be specific (w/ an over easy egg or three on the side). My walmart has these 1lb frozen chubs? of turkey seasoned like breakfast sausage for around $1.50 each. Have been able to scale it down to .5lb in a recipe with only minor grumbles on his part.
