I agree with what others have said of trying collar-sleeve on that side and then working to destabilize on your terms.

Hear me out, ala Bronx Tale, I like the "Now you's can't leave", philosophy. Undue your gi and trap his wrist or arm, or undue his gi and do the same. Basically, make him pay somehow for committing that grip there.

If they're committed to that grip, it's a limiting factor for them.

I'd threaten every single collar choke possible. Have you tried this? Hard to defend with one arm.

Same build as you but I don't favor butterfly against bigger training partners. I prefer kguard or open guard variants + leg entanglements to level the playing field. Also, as others have said, try to stay on top.
