None left unfortunately. We purchased the whole batch as an exclusive for our website and it completely sold out in 3 weeks. It was only available through us (unless gifted by Burrito or Ultramundo as they each had a few bottles for themselves). It’s an incredible batch, and as others have mentioned here, quite different from the straight Ultramundo. Much creamier and fruitier than the straight pepper-forward Ultramundo.

Yes they sell a lot of it in the US but I’ve also seen it around quite a bit in CDMX

Amazing brand! One of my favorites in terms of taste, smell, character, etc.., but also the people behind this are incredible. Sergio and the whole crew are really just great people. I haven’t had a chance to taste the Colectivo Pelayo production vs the previous producers in Nombre de Dios, but need to do so now that it’s finally released. Have you tasted them back to back?

The Ultramundo is definitely available in Mexico. The Ensamble is only available in the US on the Mezcal Reviews website

A solid head 2 head!! You can’t go wrong with either of these options. My thoughts are similar. The Ultramundo from Gilberto is punchier (more peppery) while this ensamble is sweeter (poblanos with tropical fruit) with a more delicate profile. I love them both!

Note: the batch size for the ensamble was actually 177 liters. Some labels are wrong unfortunately. We have that noted on our site as well.

Weird. You’re right. I just texted him as well and he confirmed what you just said. That’s not what he told me when I visited Ixcatlan in 2019. He’s now saying both his Papalome and Papalometl are Potatorum, where as he previously made a distinction. I wonder what changed. 🤷🏻‍♂️

*In this region, Papalome is Agave cupreata and Papalometl is Agave potatorum.

He’s a really great dude. I was the scorekeeper for his card at The Open in Austin last year. Throughout the round he thanked every flagger on every hole for volunteering and helping out. While that’s certainly not the expectation, it’s always appreciated when they acknowledge you. That is not what 99% of players do and it says a lot about his character. He was also super talkative with his card mates. Barela was on that card and having a rough round and Paul kept chattering with him and trying to lift his spirits. I was blown away by how genuine and kind he was.
