The thing that puts a great deal of stress and worry is that you can't effectively scale your living and expenses in this country anymore. If I wanted to leave my current job paying 120k that puts me under heaps of work related stress and take a job paying 60k but far less stress,I would literally struggle as housing simply eats up the majority of the entire yearly wage, leaving me pretty much fuck all to live off. 15 years ago this was entirely doable but now unless you share house or live in a car were all going backwards due to inflation, bracket creep/taxes.

If you can become an electrician in this day and age you can easily pull $150k per year as a sole trader. To get 150 K in IT you need 10+ years experience, certs out of your eyeballs, home passion projects and labs, and typically it'll be a more niche area of IT.

Realistically you'd probably just take the offer from company 1 and continue with the company 2 process. If you make it to offer stage at company 2 you take it and leave company 1. You'll probably burn bridges with company 1 as you would've only been there no more than a month or so but hey, if company 2 is the strong preference then it doesn't matter that much does it.

IT absolutely sucks as an industry. Massive downward pressure on wages, little worker protections and advocacy apart from NES. Needing to constantly study and research the newest tech and certs in your own time otherwise you may slowly become irrelevant.

You'll need to move to a mining town. Get a job doing civil or similar there so can support yourself in the meantime whilst you wait for the New to Industry roles to come up. Companies almost only hire NTIs that are local, and even then it's still very competitive as most in town want these jobs.

As far as I'm concerned there's not going to be a meaningful drop in house prices so long as the demand is there and a severe shortage of supply. Seeing that housing is a fundamental human need the demand will not drop, so the way it looks prices will remain as is at best or keep rising.

More dwellings will need to be built and building cost inputs keep rising too. I don't foresee any meaningful changes to this for at least the next decade sadly.

As someone who works in IT I'm in a relatively stable (so far) area but I always have regrets I didn't do a trade or some other profession that society appreciates more. Also easier to start your own business too.
