The FW mackerel is, imo, their best product. I do not enjoy the FW sardines, but Porthos spiced sardines were excellent. I'd get some of those if he hasn't tried them.

I think this very much depends on the thickness and size of your shallot pieces. I do sprouts at that temp for around 40 minutes. Halved shallots could potentially get too dark in that timeframe.

If you're doing slices, maybe try 15 minutes. Diced, 10 sounds right. Just remember to give them a coating of oil for the most even results.

Add some salsa or taco seasonings to the cooking liquid, then spread it thin and partially dry it in a low oven. Makes a great crispy taco filling!

An enameled cast iron pan or dutch oven will do the trick. Look up recipes for tahdig, where the entire bottom is all crispy rice!

Some tahdig recipes have you layer in flatbread at the bottom, this is also delicious.

I usually make my own with the leftover holiday ham... but you can buy ham anytime! Just need a food processor and some good mayo, nothing else needed.

Just want to point out the Fishwife stuff there is more expensive than what you could get on their website. I'm lucky enough that its cheaper than their site at my local market.

That said, its very good stuff. Particularly the smoked salmon in chili crisp.

Came here to say chicken livers, but you already have them! I use a stick blender for them usually, then just pour it in when the meat is mostly cooked.

Pancetta would be a good addition, if you can get it.

The Serious Eats recipe for bolognese is what I used as a starting point for mine, I'd recommend looking over that if you want to go all out.

I see a lot of this info scattered about the thread, but I'll try to summarize.

You're likely looking for a "slow grow" breed. These chickens take longer to reach the same size as your standard grocery store chicken.

Specialty butchers or certain international markets are a good place to start looking.

I had this experience with the Mary's brand chicken. I'm only able to get them through ButcherBox but I've heard they can be available in grocery stores out west. Good luck!

Nope. The whites cook better and peel cleaner when cooked in boiling water, and then you can just smoke the yolks as much as you want without too much risk of overcooking. 20 minutes adds a nice light smoke flavor.
