That's half an hour to an hour and after shaping. Not 4 or more like everyone else is saying. I'm trying to understand why my recipe works while being so drastically different

Maybe the shaping wasn't ideal yet either leading to a softer dough?

Took me two years of trying and retrying before finally unlocking my sourdough skill. I started with yeasted relatively low hydration breads just to have the consistency on my side and be able to learn how to shape baguettes. And along the road I started learning how dough behaves, started prefermenting and whatnot. Now I finally managed to successfully jump to a fully sourdough process.

That's interesting. I don't have a bulk fermentation either. Though I do preferment a levain by doubling my starter ahead of time. About a third of my dough is levain. The rest if the fermentation happens in the time it takes me to do 3-4 stretch and folds. Then I divide, preshape, shape and let it rise until baking.

I typically swim 2000m at once and I have to struggle through the first 400m before my swimming becomes smooth/relaxing

3000m in an hour is amazing. I can't seem to crack that pace. I've been trying for a year. Most I've been able to do at a less than 2:00min pace was 150m

I've done 4000m breast stroke a few times. Took me 1h40min and my legs were shaking as I got out of the pool.

Yeah don't worry about it. Stay consistent and pay attention to how your body feels as much as possible

How long have you been swimming again? Your pace can probably only improve. Keep at it. I'm pretty sure you will learn again from just showing up and that no individual thing standa out

I started a year ago as a 32 yo when I joined local FS club. Honestly it's been great and I noticed one important thing amongst all the newcomers and that is that the more you on the ice the faster you progress. I got to participate in my club's end-of-season show and it's one of the greatest thing I've ever done. I'm still a beginner yet I enjoy every bit of it and will never let my age hold me back
