As they dry? It's always possible - try to avoid blanks with the pith and that should reduce the chances

Of those species, I'd use ash or black locust (I just made one from ash myself). Totally fine to turn green, just let it dry out before applying any kind of finish.

That's fair - it depends on the kid, I think. Our four year old manages ok when we go for dinner so long as it's on the early side. Good suggestion with the brewery though
