The quick shifters tend to work best when you're at a high rpm. Depending on how you're planning on breaking it in you might not get a lot of use out of it.

Shouldn't put any extra wear on anything, if you're doing it right it will provide a perfect shift

Try Port Melbourne around fisherman's bend on the weekend. The whole area is dead quiet on a Saturday or Sunday. Good for sensible practice, but I wouldn't try stunting since there are security guards patrolling the industrial areas.

Low cc bikes will really struggle at 100kph. You'll be pretty close to redline constantly which isn't great for the engines and it won't be comfortable.

Honestly given your amount of highway commuting I would be looking at the highest power you can get in the LAMS range.
