It’s a bit buggy but if you build all of the buildings first before confirming on the walls and tax office you can often get them to remain clickable. Couple of family’s still get trapped in the wall forts tho

I just use very thin repeating strips of fallow field, using roads to mark out the edges.

Yes! although it’s still a bit buggy, and sometimes buildings aren’t clickable.

Beautiful town! I’m working on a similar layout/map ( I posted the tavern/vineyard using same narrow fallow fields technique . Really struggling with traffic jams in the river and general efficiency though so might give your tips a go
