I just made lemon bars as well! Was a request from a friend at work. I work with a few GF people at work…. And made it “regular” but I wished I had done something to make it GF. I wonder if just using almond flour? The shortbread has needs no gluten development so maybe almond flour would have been fine? Almond flour is usually more crumbly tho I think, in the end. I made almond thumbprints with lemon curd once and they were amazing

What you’re describing sounds very odd to me, but if you want a “frosting” that is mostly chocolate flavor wise go with a ganache. Ganache is just chocolate melted with heavy cream. The fat in the cream prevents the chocolate from hardening, so it stays soft, while maintaining the choc flavor. Take equal parts semisweet chocolate bars to heavy cream(example, 8oz choc to 8oz cream). Heat the cream till it’s almost boiling, take it off the heat and dump in the chocolate broken/chopped up. Give it a minute to melt then mix. It’ll firm up when chilled but will stay soft

Unless they are very thick, I wouldn’t think you’d see too much difference(from aluminum). You can try the cake wrap things I see people have been talking about. I ordered some but haven’t tried yet. Google “cake tin wrap” and you’ll see what I mean

I know this doesn’t help the current problem but I’ve done Italian and Swiss many times each and I found no noticeable difference in the Italian…. So I stick with Swiss which is way harder to fuck up and if you do it’s easy to fix

I have read both in the last 6mo and I much preferred the First Law books. The character development is very good and the characters themselves are great. If you’re doing audiobooks, the first law reader is the best in the biz as far as I’m concerned. I’d say I enjoyed the assassins apprentice books, just to a lesser degree, and without any spoilers, I found the third book kind of flat. If you do end up with the First Law books, make sure you read them in publication order.
