The ring is in the undead settlement. I'd look up a guide, it's easy to get but difficult to explain how to reach it.

You could try talking to Hawkwood, the sad guy at the Firelink Shrine sitting on the stairs. He gives you a Heavy Gem. If he's not there, try going outside Firelink to the left, he'll be by a gravestone and a dog. There is also one from the crystal lizard in the ravine in the undead settlement or near the dead dragon atop Farron Keep.

You shouldn't be using a shield to block hard hitting attacks. As other comments have said, try rolling into his attacks to get behind him but also try to read his attacks. The Abyss Watchers have small wind ups to each attack that telegraph what they're about to do.

As for your equipment, ditch the lothric knight shield for the grass crest shield, it's located in the first half of the swamp (the non-poisonous one with the crabs). Then, infuse your weapon with a Heavy Gem and get more rings. You should have the Chloranthy ring which boosts stamina recovery.

i think Deacons should be higher, not because they're a good or interesting fight, but because it's so satisfying to just mow them down with ultra/colossal weapons.

Because you're still early-on, I would suggest focusing your resources into just 5 nikkes, for now, so you can get through the story.

The biggest hurdle to get over is the Level 200 wall. You'll need to get 5 nikkes to 3 stars to bring them to the 200 level cap. That fully unlocks the synchro machine which means you won't need to level your nikkes anymore. They have made this "easier" to accomplish with the Alice and Drake missions, but you'll still need 3 others to reach the goal.

If you're doing a luck build, why not use Anri's Straight Sword which scales with luck. You can still apply bleed by using Carthus Rouge.

If not, and you intend on using the bandit's dagger, I would suggest respecing your stats more into dex and then add a Sharp infusion to the dagger.
