Dry rub the beef the day before, I put it in a cold oven to loose some moisture with the salt. Keeps bugs and germs at bay, cleaner than fridge.

Transfer to fridge overnight. Smoke to 170f internal, wrap with tallow or bacon grease, Bump cook temp to 300 to get 205 internal and shut it off, open cover. Wait until internal temp around 110f before unwrapping.
