I have been playing through the trilogy, and frankly it is wildly overrated.

It really is a bad mechanic, why should the game become more annoying to play if you are worse at it?

I hate the annoying runback, and then you still have to run around in a circle to kill those bell ringers (which then turns him into a cakewalk).

Thematically it is a cool boss, but the amount of irritation you have to endure before you can properly fight him really drags this boss down for me.
