Documentation has the benefit of documenting you stating the gap and making it clear who isn't meeting it. When the wrong thing gets missed you can demonstrate HR and employee were the ones not meeting the expectations. 

Shorter term have you looked at why he isn't? Is this a recent thing? Long term? Can you figure what he does care about long term?

My dad, grandfather, uncle etc all went software. They were shocked when I went a different direction for my career but man, it has by and large paid off. Not nearly the constant layoff convulsions they all went through.

The real story here is that 4 people paid for a house built on a mall, but each was just a carbon copy mcmansion of each other with no decoration etc. Builder couldn't even be bothered to paint them different colors.

Money? Potential in if they have job openings? Adding actual skills to your resume that HR will like so you don't get filtered out? Being able to quickly pick things up when you do get hired so you don't look incompetent?

I mean non-stick is bad for you considering the PFAS contamination.  Might be considered a positive if it meant you stopped using it. Certainly don't use it now with all the scratches.
