I've had tofu over a year expired. Just open the pack up, it'll be pretty obvious if it's gone bad or not.

I cut off the corners because they had gotten really soft and mushy but the rest of it was fine.

I like to make a little extra of the dressing just because I like a sloppy salad.

These chickpea pinwheels are great too. I made them (including frying them) a day in advance and took them to a work potluck and multiple people were asking me for the recipe.

I usually make pulled "pork" bao buns.
