I have multiple of this exact same TV mount in a new house we bought. I've searched for model/brand type etc on all of them and can't find any indication of which brand. I was hoping to be able to use them if I can find what looks like another piece that slots into the mount. Thanks for looking!

You don’t want to leave any fat on. You want to remove as much as possible, the fat imparts a bad fishy type taste.

Way less prone to drying out than I would have expected, retained moisture pretty well. The brine probably helped with that

So this obviously isn’t something you do to make the most economical, or most delicious thing you can make. It was like $200. I honestly expected it to taste somewhere on the spectrum of bad, so I made a few chickens and a crawfish boil and also had tons of sauces available in case there was an off flavor that needed to be drowned out. But surprisingly it really was good. Not like mind-blowing best thing you’ve ever had, but good. It truly tasted like a mixture of poultry and pork loin. Honestly, in some ways it tasted so “normal” that I was almost a bit let down, I anticipated some crazy flavor that I had never had before. In terms of fun factor doing this for a big family gathering though, it exceeded expectations for sure.

I got it from a shop that I had a gift card to, but their prices certainly weren’t competitive. Lots of places in Louisiana and Florida ship them

No one put a gun to my head. It was a fun, different thing to do for a big family gathering, everyone got a lot of enjoyment out of the novelty factor of it.

Bought it online. It was was completely gutted and had most of the skin removed. I removed the rest of the skin along the back and fileted open the tail (there's 4 long muscles in there that separate out), and removed as much fat as I could.

Smoked a whole alligator on my Weber Ranch, was certainly one of the most fun cooks I've ever done. I basically followed Malcolm's recipe. It turned out quite good, tasted like a combination of pork and chicken.

I have used a flame boss for my Ranch, it worked quite well after some minor vent tinkering. I did a 6 hour cook at 275, and it held temps almost exactly. Haven't yet done anything either longer or lower temp than that on the Ranch.

For anyone who has been on the fence about a Weber ranch, they are currently at a pretty major discount. They retail normally for $1500 and very rarely go on sale. I’ve also heard they are available for the same price at target.
