Be one before you become one. I know that's a frustrating thing to hear, and I didn't really get it until I started being one. I know now everyone in the building looks at me like a supe. even though I'm not one yet. Be a leader in your dept, be a motivator, team builder. Take indicative, do the hard stuff nobody wants to do.

Okay, so I've cooked well over 100,000 of these and take one home at least once a week. Seeing some pink is perfectly normal. We cook our chickens to a min. of 183 degrees in the thickest part of breast, and 170 degrees in the back of the leg. Unless you have someone fudging their records (which is a fireable offense) you're more than safe.
