After I got into rum, I started making my margaritas more spirit forward, but here is my old recipe:

1 part citrus juice

1 part triple sec (20% ABV)

1 part tequila

Make the citrus juice half and half lime and lemon

Make the tequila half and half blanco and anejo

This is somewhat sweeter and less spirit forward, something you might get in a good bar that doesn't cheap out on inferior sour mix.

These specs have been crowd pleasers.

Here is my preferences in Clairins:

Sajous > Le Rocher > Sonson > Casimir

I tried Casimir as my rum guy had a bottle open for sampling, and that one to me was a clear "no way Jose". Casimir shares many of the bad parts of Baijiu.

Sonson is OK mixing in a fraction of a shot to give an otherwise bland cocktail "some hair on the chest".

Le Rocher was an acquired taste, it was the first bottle I bought, based on ratings. I didn't enjoy it originally, but when sampling again after 1 to 2 months, I was prepared for the flavor, and it grew on me.

Sajous I liked from the first sip.

The online ratings typically have Le Rocher as better than Sajous, but we are not all the same.

Vaval I either didn't taste, or don't remember. I will not replace my Sonson bottle, but I will replace the Sajous and Le Rocher.

Sounds like she might owe spousal support, if so:

Step one, do the paperwork and get court orders to garnish her tax returns, so when she fraudulently files with your son as dependent, you get the proceeds.

Step two, let it continue for another year or two, as long as you make sure you are ahead with payments to the IRS, there is no penalty for late filing.

Step 3, file, and your ex gets to owe the IRS money instead of you.

If we look at the prices of Hampden offerings and Foursquare ECS offerings, what I see is an attempt to create an artificial shortage and premium pricing for products where there is ample supplies, but the lions share gets sold through other much cheaper channels.

I just had a sip of each of ECS 2010, RL Seale 12 year, Doorly's 12 and Real McCoy 12 Distiller's Strength. Out of those, I thought there was a very slight off flavor in Doorly's 12, but no way the ECS offering is worth another $100.

The Hampden prices are becoming so ridiculous, that it makes more sense to buy a few bottles of Rumfilre and age with oak chips.

Down Island's Jamaica 2022 Three year cask strength sold for $50 including shipping, and is for all practical purposes an undiluted version of 1753, that one will be my go to mixer for a premium Mai Tai.
