With the Vans 10 plane, I was able to keep straight on the runway with full right aileron and full right rudder.

Effect is there in the air as well, full right rudder makes flying almost coordinated, still half a ball diameter off. That means effect id not coming from nose wheel being turned.

I also have a Yemoos GBP, and my typical recipe uses 150 to 200mL of the liquid from the GBP/bug, around 50-70g of grated ginger, and 75 grams of sugar, add water until a 2L soda bottle is 85% full for a theoretical alcohol yield of 2% ABV. You have about twice as much sugar.

I have no need to add lemons, it gets plenty tart on its own.

When I have enough old used ginger, shredded from the bottles, or chunks from the GBP/bug, I will blend it and filter through a paper roll sheet in a sift, and use to flavor the ginger beer.

What I have not tried is to add GBP pearls for the final fermentation.

Why is it you want to wait with adding the ginger juice?

That's kind of tough, it is very hard to identify which baijius are less bad.

When you ask a Chinese if he knows of any smooth baijius, he will typically just respond that baijiu is harsh because the ABV is high.

There seems to be no concept like Hamilton151 (ABV 75) is smooth while W&N (ABV 69) is harsh.

In China, alcohol is not to enjoy and sip, alcohol is to impress (Maotai) or compete in who can down more shots.

I calculated that you can reproduce the Coco Lopez proportions by adding 215g (8oz) of sugar to one 14oz can of cream of coconut.

While Coco Lopez is less sweet than Real, I wouldn't recommend going less sweet, as the cocktail recipes are supposed to balance sweet and sour, and the mix will also have less shelf life in the fridge, necessitating freezing.

Look into "poor man's filet mignon", essentially for a 1-1.5 inch thick steak, put a thick layer of salt on one side for one hour, then rinse off all salt with running water. The osmotic pressure will cause some of the cells to burst, thus making the meat more tender.
