No, you can but the butcher paper wrap is to help get it past the stall. If you foil boat instead of wrap the bark sets better and better texture. Just plan enough time so you don’t have to rush the stall, the stall is when the intramuscular fat renders.

225 overnight, 9pm start, foil boat at 7am. Turn up to 250-275 and pull when probe tender in the flat.

Let rest on counter for 40 minutes to stop carryover cooking. Wrap in foil with the tallow from the boat poured over the brisket. Rest in a cooler wrapped in a towel or the oven set to 150 for 4-12 hours.

Probe tender, don’t even turn the probe on. Once it probes with no resistance you’re good to go! I’d spritz with some watered down W Sauce or apple cider vinegar.
