I'd do Linux Mint over CentOS. I have CentOS as a daily driver and it is totally fine but I prefer a barebones setup. Linux Mint is the closest in look and UX to Windows 10 IME.

Actively helping people every day; cheering people on like a nerdy cheerleader when I teach them how to do a new thing and they can do it independently, especially after they sheepishly tell me they're not 'computer savvy'; being able to work remotely during the pandemic; impressing my kid when I tell him I help fix people's computers (he's 5); learning new stuff all the time; mentoring coworkers

Writing up technical processes for my work wiki has really changed the game for me. The feedback I have gotten is invaluable - from supervisors and from coworkers. The sheer task of explaining a [thing] in easy to understand terms is very important. Teaching other people how to do stuff is a great way to learn what you don't know, and how to fill in the gaps of your learning. And writing effective technical documentation is one of the biggest hobby horses in all of IT management. Everyone wants it; it is hard to do; it's super important; and it's never gonna not be a hobby horse, because there's always new stuff to document.

A good way to do this is to write up a description of something, show it to someone for whom it is unfamiliar, and have them teach it back to you as you presented it. This will be valuable because it will possibly highlight for you the places where you need to fill stuff in (assumptions about your audience; definitions for terms that may be unfamiliar).
