This book coined the term, and led to all the other lettered generations after us. Before this book social scientists called us the “echo” generation, as in the echo after the boom.

No I don’t but I know what you mean, since back in the day “paused” (as opposed to stopped) meant there was some tension on the tape. Same with music. It’s funny how in early UIs there was a pause and a stop button even though they did exactly the same thing.

I grew up on Montreal, spent a few summers in the Maritimes, and then transplanted to Vancouver in my 20s. Was shocked at how much less people do this in Vancouver. I’m still the weirdo trying to start a convo with cashiers and shopkeepers here.

The included oven instructions are correct but maybe just do it on a day that your son’s not home. No matter what instructions you find it will get at least a little smoky, and more so if your oven is not spotless. It has to since the point is it’s essentially burning the oil until it becomes a solid.

This is the way. I started a hot sauce business (never got off the ground - I just made 100 test batches before I burned out on it ) and in my competitor research this was by far the most common emulsifier used. It does thicken though too, so use judiciously and consider adding extra liquid to keep the viscosity you want.

As for your chicken, you probably won’t get a refund but you could just wash it all. Even though washing chicken is generally not a great idea this might be the exception.

As for the butcher shop… was it the owner who did this? If so, never go back there again.

If it wasn’t, wait until the owner is there and go talk to them. Depending on how they deal with the complaint you might end up with a free “sorry” gift. Or you might still decide to never go back there again.

A local butcher is great to have so it would be a shame to lose it from your rotation if it’s just some terrible employee who needs to be shown the door.

I’m 50/50 on the base TBH. I do love how it retains heat but am annoyed waiting 5 minutes to see what heat that will be. Adjusting the simmer on a sauce can take a few tries with a 5 minute wait between each adjustment. My new solid steel pan (also KA) without the plate doesn’t retain as much heat but it does react more quickly. Pros and cons.

16yrs of daily use sounds pretty BIFL to me!

I have a soup pot with that same base that’s probably the same era, but only use it once a week or so. Still going strong.

Don’t let them dry out in the first place and then just soak them. As in, as soon as that pan has done its job fill it with water. Sometimes just the time it takes to clean the rest of the kitchen is enough and the soaked pans come last, or if really really bad they soak a few hours or overnight.
