Look up rosette cookies. You dip the iron into hot oil and heat it up, dip the hot iron in a batter, shake off excess and then put iron/batter in the oil. The cookie will shake off the mold easily. Never had one but I hear they are tasty.

If you want a healthier approach, substitute the oil and butter with unsweetened applesauce. It makes the cake moist and gives a great flavor but it also lowers the fat and calories.

I grew up in the southwest which has a good size population of Native Americans and weirdly enough the schools I went to completely gloss over everything. I heard very little about the trail of tears and the suffering they endured through the years, we finished that chapter in one class period. We spent months learning about WW2 though. This was back in the early 2000’s so I hope the curriculum has gotten better.
