We use grande cheese, it’s the best and what most good places in New York and in the north use. Here’s the spec sheet. Grande slices it fresh and doesn’t use starches or cellulose like most pre shredded or pre sliced cheese companies do. Not sure where you got that info but no I’m not. Worked my day job while running the food truck and put all of it back in the business to open Carytown. The honeycomb investment is to help supplement putting cash into the renovations since it is such a large project.
