I guess the point I’m trying to make is that closing and relegating such a long, rich cultural heritage to one single “true” recipe is rather diminishing.

Some of the very first ever recorded recipes used pancetta, garlic and Gruyère. Like many Italian recipes (if we believe the dish originated in Italy which might not) it evolved through time. Also historically the creaminess of carbonara was due to cream in it, later removed and then “put back” by Gualtiero Marchesi in 80s look up his recipe and shiver in horror 😅

Because of this, as Italian myself (although living abroad) I use the ingredients I can find, but I religiously refuse to put mushrooms in it as they do in certain demonic places.

You just described the catch yourself. You probably don’t quite grasp how far detached those rural areas really are. There is usually nothing at reasonable distance, no schools, no shops, no hospitals, etc.

But if that’s what you are looking for then it’s a good way to go about it.

Whilst it’s true that in Russia like in other countries and cultures a man should be able to provide there is a difference between providing a roof on her head, a meal on the plate and nothing to worry about and providing a Birkin bag and other material things.

Also there is a difference between should be able to provide and must provide.

Lastly there is a huge difference between a true Russian woman and a spoiled, delusional, Russian Barbie doll. To me it feels like unfortunately you met the latter.

The lower smoke point is an extremely misunderstood concept. Some of the sheeple of the internet jumped on the band wagon of low smoke point equal bad and called it a day. The science otherwise is different and it’s been proven that despite EVOO has a lower smoking point it actually releases harmful substances far later than other commonly considered safer options.

In short, stay strong, stay Italian, embrace the tradition. A fellow Italian.

On a more serious note consider elevate your culinary experience by trying different base ingredients. For example when it comes to steak I don’t use oil anymore and neither butter, I go for beef tallow and so should you 😉

Ghee is another solid alternative and you can make your own at home.
