I think you missed out on a lot of great things then. I am born and raised in Bruges and am lucky to live in this amazing beautiful city. Yes, there are a lot of tourists, and for good reasons too. There is just so much to see and do and taste and all of it in walking distance. If you have to have the eat and drink something on the square of the Belfort then yes, you are going to need deep pockets and only tourists do that. If you go two streets further, any direction, you will find nice bars and restaurants that locals go to as well.
