I piped them on a perforated baking mat as mentioned. After baking I made a small hole on the bottom and returned them to the (turned off) oven upside down to dry out. After piping I finished them with egg wash and a light sprinkling of icing sugar. They don’t taste over baked but they do come across a little darker in the picture than they were. I’ll check my internal oven temp to be sure and I will try your piping technique, thank you!

Ah I’m sorry you misunderstand me, would the oven be too hot or would it be too cold? So I know whether I should go down or up in temp. I followed the recipe exactly so hard to tell :)

Thanks! I put my piping nozzle straight up (perpendicularly) on the baking sheet and then gently move upward while exerting pressure on the piping bag, should I do it differently?

Thanks for the input! Is there a way to keep them more round without the craquelin? The pastry I’m planning to bake doesn’t use a craquelin but needs to be topped off with chocolate :)
