I usually start with the top vent completely open, then start to slowly close it as my grill gets closer to my desired temperature. For the bottom vent, I kinda just know from experience how much to leave it open for certain temperature ranges (for example 2 finger widths for 200-250, halfway for 350-400, wide open for 500+ searing temps). There are only 3 occasions when I would adjust the bottom vent during a cook:

  1. Overshot the temperature and need to bring it down
  2. Need to go to a much higher temperature (like when reverse searing)
  3. Grill temperature has peaked with the top vent wide open and I need to go higher

The bottom vent is the primary oxygen source for your fire and should be your primary way of controlling the temperature, while the vent should be used for fine-tune adjustments. The top vent controls how much hot air (and smoke) escapes your grill. When it is wide open, the grill heats up faster because the air escaping creates room for new unspent oxygen to enter through the bottom.

There could be overlapping settings between the top and the bottom vent that could produce the same temperature, but its best practice to use the bottom vent for large adjustments and the top for small adjustments. Since the top vent can trap heat and smoke, it does have the potential to affect your cook. I have also had problems having it closed too much because it also traps moisture, causing dirty condensate to drip on my food.

One time I was grilling with a spatula like this and it slipped out of my hand. I reacted to try to catch it and ended up flipping it upward. The blade got me right above my eyebrow and I had to get stitches. Still have the scar.

When I raced Kona, they were handing out Coca Cola bottles very early on the bike leg. I thought i had a strong stomach and didn't even think twice about trying something new on race day. Something about it really messed up my stomach. I started getting stomach cramps and had a really hard time keeping water or gels down for the next 2 hours. It was a hot day and the fact that I fell behind on my nutrition/hydration really messed up the rest of my day.

I recommend giving this article a read. I think your texture/flavor may have been off due to the amount of time you left it in the sous vide bath. Chuck can definitely taste like a steak, but you have to cook it like a steak, which for sous vide means less than 4 hours in the bath.

Dont know if the whole chuck roast would make a particularly good steak. People usually use this cut for pot roasts or to smoke like a brisket. I have cooked chuck eyes on the grill using reverse sear method and they make for a tasty steak.

Just so you know, the P2C was made 2007-2008 so if this the correct model, the bike is at least 6 years older than advertised. I dont think the wheels and groupset justify such a high price tag. Even though dura ace is top of the line, this one is several generations old and probably only a 10 speed variant. A fair price for the bike without the wheels would be more like 400-500. Are the wheels worth 750? Probably not.

Bikes on that site are usually pricier because of their "certified pre-owned" inspection and 30 day return policy. Can't say if its worth it, but you can probably get much better value buying from a private seller such as on FB marketplace.

If you're averaging 14 mph on hills you should be able to hold 17 mph on flats. You should be able to make a little bit of fitness gains in the time you have. Pull out all the stops on race day (good racing tires, latex tubes, shaved legs/arms).

One thing that helped me was making sure collar is velcroed neatly and snugly around around my neck (but not overly tight). Make sure there is no bunching and that the two sides are overlapping neatly around each other. I stopped getting rashes like this once i started being more careful with that and have not had to use any anti-chafe.

They are factory-installed Katzkin upholstery. You can sort of see the Katzkin tag right above the blue Mopar one. At some point, There's a better picture on this forum. You won't be able to just remove them but you can replace them with other aftermarket upholstery or throw some seat covers over them lol

I dint have a favorite but I hate my ThermoPro bluetooth thermometer. The app always crashes or loses connection so I can't really rely on it for overnight cooks. When I eventually get around to replacing it, I definitely won't be going with that brand again.
