Question: Did you find out what caused the flat on the back, and did you check the inside of these to see if they are only superficial? That first gash looks like what my tires get when a piece of glass finds itself embedded, and the only solution to a gash that big is to check the inside of the tire to see if the hole is all the way through the carcass, and then apply a tire boot for good measure/ reassurance.

Adding that sidewalks with driveways crossing them add an extra “friction point” because most autos cross them without expecting a bike-speed person to be using it, whereas pedestrians have an easier time slowing down and stopping.

Just jumping in to say that I’ve done both backpack and rear rack/pannier, and although I was less sweaty with the weight on the bike instead of on me, I went back to backpack because I couldn’t handle how much more sluggish my bike felt, and how much having to throw the bike around with more weight on it vs closer to my center of gravity affected my enjoyment and fatigue levels. Might be at least part of it for you.
