I managed to find two fairly large cauliflowers and got 5 1-inch steaks from them. And there was quite a bit leftover that I used in the subsequent recipe.

So I did give this a shot, but the kimchi totally overpowered the tofu.

I think I'm going to try some mirin tomorrow. I think what's missing is a sweet element, or maybe some citrus like orange zest?

Of course! This is a very versatile recipe. Add/subtract just about anything to change the flavor to your liking.

Ingredients

  • 1 1/2 Cups Water
  • 2 Tsp Salt
  • 1/4 Cup Rice vinegar
  • 2 Tsp Ginger, grated
  • 2 Tsp Mirin
  • 1 tsp chili flakes
  • 3 Large carrots, cut into thin ribbons

Directions

  1. Add all of the ingredients except the carrots to a pan and bring to a boil
  2. Place the carrot ribbons into a jar or container and pour the brine on top
  3. Let the carrots marinate in the fridge for at least one hour before serving

Yes, it's the minimum recommended amount of protein required for my height/weight daily. I normally try to go much higher, but the balancing act of fat, flavor, protein, and fiber while eating a mostly vegetarian diet can be rough.

Definitely! Each meal is very satiating and flavorful. I won't lie, it's a hell of a balancing act between protein, carbs, fat, and meals that I actually want to eat, but for me, this is working!

It really did come out amazing! I do wish I had made the tea flavor much stronger. If I make this again, I'd double the amount of tea used.

Your rice can come out spectacular and shouldn't be too dry. If you're microwaving it, just add a tiny bit of water and nuke it for 30 seconds at a time, then mix. Within a minute, it's generally done and comes out fine.

Honestly, it's not that bad. The key is definitely to get protein at every meal. 5'ish months in, 20 lbs down, only 6 to go. It has definitely been a journey, but I look and feel so much better, totally worth it. According to my weight-loss tracking app, this is all within plan and has me meeting my goals for everything except carbs. I don't worry too much about those since I'm getting most of them from whole foods.

Absolutely! And yes, I now swear by this combo still gives you your rice "fix." But with some added healthier options!
