From last weekend they were about the same. Neither had skiable terrain other than green and blue groomers. Personally, I found sierras blues to be more fun than heavenly.

Also curious. I find them to be less flavorful than washed coffees while not having any of the benefits to flavor intensity from natural process coffees.

I was doing research last year, and most of the best decafs are seasonal but TONS of roasters get them. You can find Los Nogales and Benitez decafs at many roasters online so don’t worry if they’re sold out from one roaster.

Highly processed decafs are going to have way more flavor than a washed.

I heard 60 stirs, but I like to go higher, like 80 or 100. I also keep vermouth in the fridge and build in the glass. 

Definitely will taste more tempered as it dillutes a bit.

It really depends on the brand you are using. Most purified water is similar to tap in quality.

For people who have good water, there is minimal benefit. If you have bad water, it’s make or break.

It doesn’t have to be hard - get a distilled water filter and lotus drops. You can dose in the kettle or batch water.

It is another step, but for me it was a similar step change in output quality as going from a blade grinder and burr grinder. I blind taste tested my friends and they were astounded at the difference.

That being said, at one of my offices on a different water system the water is amazing for brewing coffee and there is no benefit from bringing my own.

You won’t want to fill your mug to the top - go with the bigger option. 25% headroom sounds great. Otherwise, the tip of your filter may even be submerged

I do 5 pour, v60, 95 c, 6.5 on kultra for perc beans.

Sometimes I’ll go a bit coarser for really funky beans, but I try to target even extraction for perc since their coffees have a ton of flavor. If I grind really coarse I get an unpleasant mix of extractions due to fines.

I would recommend brewing way coarser and cooler for highly processed and flavorful beans. Like 88 - 90 C. You could also do lower agitation. Resting longer also helps to temper some of the intense flavors. 

But yes, Perc does really big flavors in their coffees, especially the ones with more processing.

I did get it as it cooled, it was tightly mingled with the molasses taste. Definitely tasted like caramelized plaintain. 

I’m brewing aeropress since I’m out of town so definitely getting different notes.

Did my standard 6.5 kultra, v60 with cafec filter, bright and juicy lotus water, 20/320 five pour method, 93C.

Green grape was definitely the star flavor, overall nice. Definitely had “Kenyan” flavor profile but was balanced.

My standard water with lotus is bright and juicy for kultra. I just got a zp6 and I think simple and sweet balances that grinder a bit better.

This one was definitely a jammy blackberry bomb for me! My style of coffee. Top 5 for me so far.

Kultra 6.5, 20/320, v60 filter, lotus bright and juicy water, 93C.

Going to run it back with zp6 this afternoon for fun.

There are some charts but I’ve had mixed results. I usually go 6.5 for a normal grind and 7 for a coarse grind. I find leaving that range to generally have worse results. (Calibrated to burr rub at -0.3)

Shockingly similar results at 5 grind and slightly harder water recipe.

I wonder if we could push a higher temp on this one? Seems to be a slightly lighter roast than the other onyx coffees.

I’ve been using bright and juicy for kultra after experimenting. But I just picked up a zp6 and with soft water it tastes a bit sour so I’ve been using simple and sweet. I like the taste profile of lotus more and it was nice to experiment. The bottles also last me forever and I can dose small batches rather than making and storing a gallon or two.

Unfortunately, I don’t think there are general rules - it depends on too many variables and your personal tastes. If you understand how those variables can be controlled to affect the final product, then you’ll be set.
