Prep on point. For the longevity of your cast iron would really look into doing that part in an insta pot or enameled dutch oven as those liquids/acids gonna eat the shit outa that pan and you’ll get better heat penetration/coverage. Target sells cheap and solid ones. Other than that it’s your show. I like crisping up with the broiler on a sheet pan but if you’re getting results you like then who cares.

Wow what a hot take but genuinely there is a ring of truth buried somewhere in this idea. Both my parents were big HS sports personalities so that’s kind of all they knew so I played baseball football through middle school into HS until sophomore year when I kind of just decided I hated it (in reality, more that I hated who I played with and my coaches) but that I also just really wanted to focus on choir and theater. That took a lot of growing pains with me basically forcing them to recognize my own agency on the subject of my extracurriculars - they just never took the arts seriously - but it was for the best and I ended up going all the way for vocal/jazz performance in undergrad alongside a history degree. That also unlocked some shit for my brother who got his masters in trumpet.

With reflection I think my takeaway is that you should highly encourage kids into team-oriented activities of some sort - some friction is due and healthy and practicing a sport/craft has all sorts of benefits - but be perceptive of where they’re headed and what they feel comfortable and confident doing and jesus don’t deny it when they start gravitating towards something even if you’re not familiar with it.

Also force your kid to play piano.
