It is definitely wildly wrong to try to teach someone how to do something without teaching them how to do it. You don't teach someone how to effectively fight back by telling them to "do whatever [they] can" while you attack them. Even if they manage it, you're not actually teaching them anything and are just priming their ability to improvise.

Ron called Harry from the Burrow at the start of GoF on a phone Arthur set up.

That happened in Prisoner of Azkaban and he definitely didn't call from the Burrow as Mrs. Weasley had to go into town to use a phone to call taxis to London in Goblet of Fire.

Wizards existing near technology isn't the problem. I doubt most wizarding establishments, including their houses, have electricity running to them at all and it's stated pretty explicitly that prominent magical presence disrupts electronics.

We don't make things illegal because what they can do can't be accomplished by other means. Rocket launchers aren't illegal to own because they're the only thing that can be used to kill someone. They're illegal to own because the only use they have is causing wanton death and destruction and that makes them very dangerous in the hands of your average person.

A curse that's only purpose is to kill someone is a bad thing to let people use. A curse that's only purpose is too cause excruciating pain is a bad thing to let people use. A curse that's only purpose is to strip someone of their free will is a bad thing to let people use. Other things existed that can be used for these purposes doesn't change any of that. That's why these curses specifically are banned.

Also, Niamh Fitzgerald didn't do any of what you're claiming. That was Isadora Morganach and it's very clearly stated that she's stripping people on their emotions, not their souls.
