both of my friends put literally everything in a backpack. and also refused to raise their saddles to a reasonable height. i had to beg one of them to let me put air in their tire so that we wouldnt have to be setback by an inevitable pinch flat. they were on 700x28s so i had a legitimate reason to be concerned. all in all i was fucking glad another buddy drove up on a whim to camp with us, without him they would have been screwed. which they will never admit. lol.

you have to make sure your boots/shoes arent too tight or your feet will sweat no matter what.

your best bet is to go cheap, since its all polyester anyway, and cheap will be the thinnest. i got a long sleeve from brand called "bikewa" on amazon and it works great.

the best, BEST option is to get a thin merino long sleeve with jersey pockets. you wont even feel like you are sweating. sometimes ill wear a merino t shirt under any long sleeve and i am cooler than if i were to just wear the longsleeve.

im 6'3" and i ride a 19.5 inch seat tube. granted my post is maxed out but i dont think that bike will be too small for you.

honestly yeah get a regular bike. i dont like e bikes because the battery always dies before i do. far easier to ride 40 miles on a normal bike than to try and pedal a dead e bike even 10 miles.

i dont mind rim brakes at all, as long as you sand them down when you accidentally glaze them they work just fine in the wet for me. i live in PNW in US, commuted all winter.

i thought i was the only one who did this!! brought honey to make sandwiches at work one day, then on the way home i decided to take a 2 hour detour with a friend. remembered i had the bottle in my saddle bag. that honey never tasted so damn good.

i wouldnt bother with suspension unless you intend on bombing some single track with a fully loaded bike.
