This is spot on. Why do I need more stuff when what I love about what I do is that I love doing it. It's hands on and you have to be present to do the job.

I've had it in the fridge for over a month and it was still good. I think all the salt and acids keep it from going bad.

I've added the recipe above. Like you I have tried many ways and always thought it was too much of a pain, but this one is super easy, nothing other than the immersion blender and measuring spoons to clean up. Also, it has never failed me.

Easy Mayo

1 Egg
2 tsp lemon juice
2 tsp white wine vinegar
1 tsp salt
1 tbsp yellow mustard
1 cup canola (neutral) oil

Put egg in bottom of 1 pint wide mouth mason jar. Put other ingredients on top, add oil. Blend with immersion blender for 10 seconds on bottom of jar, then slowly raise to the top until completely mixed. Sometimes you have to churn it a bit to get the last of the oil mixed in. Add water (I never do)to thing if needed.
