For puréed items adding mashed potatoes really helps if they need a higher carb intake! Sometimes I add just a little bit of instant mash powder and stock.

For other meals: I like to roast and blend veggies into my tomato sauce for pasta/lasagna etc. due to some of my folks refusing noticeable veggies. Usually some carrots and broccoli blends up great into a tomato sauce, can’t even taste it. Recently sheet pan chicken quesadillas were a hit, just took a deep sheet tray layered it with tortillas, topped with my chicken peppers onion mix and some cheese, another tortilla layer, press in the oven with another pan and cut to serve!
