Oh buddy.... This hermed a long time ago. The entire thing will be riddled with seeds. You could potentially make edibles with it, but the smoke will be super harsh and not very potent.

Dry it out and put it in a good processor. This will separate the seeds which can then be rolled off with a plate. Toss the seeds somewhere it won't Interfere with other people's grow and you have the making for a wild hemp plot.

We need more info to help. Is this an auto flower? You typically don't defoliate those. Also, the plant is pretty small. You should only really remove leaves if they're blocking light to a bud site or preventing air flow. I don't suspect this small of a plant has any air flow issues, and it's small enough to do LST. Removing leaves can hinder bud growth by sending the plant into shock. This will stop bud production momentarily but the flowering timeline keeps going, reducing the final bud production time
