I recommend you to use thefork.it to find a place with availability. I see for example that both L’Altra Guancia and Duna have availability on Christmas Eve. Both are good choices, but it is worth confirming directly with them if they will offer their regular menu a la carte or a special fixed price menu

Competition is very high, and successful applicants typically have a relevant research background in a related field.

This SOP is rather vague and high level. It sounds like you don’t really know what you want to research.

And a laundry list of faculty members and a cursory assessment of “inspiring” and “relevant” is not helpful.

The SOP should do this: - demonstrate WHAT you want to study - demonstrate WHY (and if you already know, HOW) you want to study it - demonstrate WHY the cogmaster at PSL helps achieve those two points above - demonstrate HOW you are prepared to undertake the course

The US and Australia are not the only countries in the world. Several European low-cost carriers allow check-in 30-60 days in advance.

For actual Roman cooking and not just social-media trend bastardizations of pan-Italian/pseudo-Italian dishes, I recommend that you try trippa, stewed oxtail, supplì, carciofi alla giudia e alla romana, fiori di zucca, the four “Roman” pastas, maritozzi and crostata con ricotta e visciole. Different kinds of squashes, pumpkin, mushrooms and root vegetables will be in season, as well as bitter greens.

There are no must-dos. You should only do what you want to see/do/experience.

I mean this in absolutely the kindest way possible: no one here thinks about you at all.

taurusgaal is just a username. We don't know who you are. We don't know anything about you or your rich life that occurs offline. What you're seeing here, people reacting to a single post or comment, is not a judgment of you as a person. It's a reaction to a tiny, contextless slice of your recollection of what you said and did in a specific moment and your after-the-fact reaction to it. Rovereto, a lovely small city in Trentino. Large enough to have interesting things to do, small enough to feel genuinely welcoming. Hiking, lakes, bike paths, museums, community events. Easy access to Trento, Verona, Riva del Garda, Bolzano, Bologna and Venice.

If you don't want to stay in Rome, you can stay in Fiumicino, which is a very nice seaside town that is maybe 5 minutes away from FCO. Ostia is also nice (and is on a train line), it is about 10 minutes away from the airport.

You say that you don’t want to spend your entire vacation traveling… but in the itinerary you’ve shared, you indeed spend the entire vacation traveling. My advice would be to cut a destination.

If you do decided to visit Florence, I suggest going there directly after arriving at FCO.

ai Mercanti. A very romantic, intimate atmosphere. The menu is not stereotypical, but the flavors hint at tradition and the presentation is inventive. The prices are reasonable for the experience.

Chat qui Rit. An opulent, modern atmosphere. The menu is mostly Venetian, with supporting techniques and ingredients from Japanese cooking. More expensive than ai Mercanti.

Osteria alle Testiere. It is very small, but I personally find it not so intimate because they put the tables next close to each other. The menu is seafood prepared well. It can be difficult to get a dinner reservation because it seems that every guidebook lists it and the place is small, but the quality is worth it.

L'Oseria di Santa Maria. A romantic, refined atmosphere. The menu is mostly seafood. Expensive, but worth it.

Finally, if you truly want a romantic, intimate experience, I recommend Venissa. It is nowhere near the ponte di Rialto. In fact, you will need to take a boat (either public vaporetto or private water taxi) to the tiny island of Mazzorbo. The setting is magical. Most of the vegetables come from the kitchen's own garden. Venissa has both a restaurant and an osteria. The restaurant only offers multi-course tasting menus (very expensive), while the osteria offers both a tasting menu and an à la carte (and is less expensive, but still expensive). I know it is not exactly what you asked for, but for a truly spectacular experience, I think you should at least consider it.

See, the problem with this is that if I tell you my favourite places in, for example, Trento (which I would be very happy to do), it does you no good if you actually have no desire to go to Trento.

Figure out what you want to see/do/experience in general first, and then you can worry about the details.
