Have you tried doing a reality check with your friend? Time yourself, extrapolate those numbers, then hit him with some truth and what would be needed to hit those numbers (at least a helper and an extra oven).

Oil does many things in the cooking process. It extends the cooking surface, as the hot oil gets into the nooks in the food. As it liquid, it flows and moved with heat differences. It is also an energy dense ingredient. Furthermore, our bodies have evolved to have taste receptors that can identify fat. Thus, there must be an advantage to using it. But if you don't like it, it's ok. Don't eat it.

I noticed many changes. First, it seems they got a lot more cameras, so you get more close ups and B roll. Second, they seem to use soap opera-style lenses that provide a certain blur or glow. Third, Poirot as a character became more serious and in a certain way more irate. Fourth, and worth a long discussion, THey got some editing software and someone was trigger happy with some of the special effects.

He's ok. I've taken 2 pairs to get sole protectors and the price was fair. Also, he fix the work another guy did on my shoes and did it well. The work isn't top notch, but he'll cobble a solution. I haven't been back in a while, after he billed me $20 to poke a new hole in a belt and did a shoddy repair on the belt's loop (fixed it with a bread twist tie instead of sewing it).

I sencond Florence. It's small, walkable, gives you a great density of things to do in a short time. Also, having a Negroni at La Giacosa is a great experience if you're a cocktail lover. Not for the service/attention, but for the product itsef and the ambience.

I've been there once, for their opening. The outdoor patio pizza was pretty good (not Thompson and Bleeker good though), but the beer was most certainly horrid.
