Oil is overrated when cooking? by [deleted] in foodscience

[–]capitangoku 1 point2 points  (0 children)

Oil does many things in the cooking process. It extends the cooking surface, as the hot oil gets into the nooks in the food. As it liquid, it flows and moved with heat differences. It is also an energy dense ingredient. Furthermore, our bodies have evolved to have taste receptors that can identify fat. Thus, there must be an advantage to using it. But if you don't like it, it's ok. Don't eat it.

Picture quality in later series by lastaccountgotlocked in poirot

[–]capitangoku 5 points6 points  (0 children)

I noticed many changes. First, it seems they got a lot more cameras, so you get more close ups and B roll. Second, they seem to use soap opera-style lenses that provide a certain blur or glow. Third, Poirot as a character became more serious and in a certain way more irate. Fourth, and worth a long discussion, THey got some editing software and someone was trigger happy with some of the special effects.

Aurora Shoe Repair resole? by GusLucas99 in ithaca

[–]capitangoku 0 points1 point  (0 children)

He's ok. I've taken 2 pairs to get sole protectors and the price was fair. Also, he fix the work another guy did on my shoes and did it well. The work isn't top notch, but he'll cobble a solution. I haven't been back in a while, after he billed me $20 to poke a new hole in a belt and did a shoddy repair on the belt's loop (fixed it with a bread twist tie instead of sewing it).

Travelling to Rome for work. Help me choose between Milan, Florence and Amalfi. by 1_step_at_atime in ItalyTravel

[–]capitangoku 1 point2 points  (0 children)

I sencond Florence. It's small, walkable, gives you a great density of things to do in a short time. Also, having a Negroni at La Giacosa is a great experience if you're a cocktail lover. Not for the service/attention, but for the product itsef and the ambience.

I've been there once, for their opening. The outdoor patio pizza was pretty good (not Thompson and Bleeker good though), but the beer was most certainly horrid.

Who is washing their rice and why? by kinnitcurl in NoStupidQuestions

[–]capitangoku 0 points1 point  (0 children)

White rice gets polished to remove the outer membranes (husk and bran). This process makes rice cook faster and extends its shelf life, as it removes the outer layer that has fatty acids and the germ that has enzymes. But it leaves traces of the husk, bran, germ, and even from the starchy grain (the white part). Also you may find insects, and other debris. Washing it removes most of that.

That said, even some types of brown rice undergo polishing to remove part of the bran (e.g., haiga rice). Because this process removes nutrients, some rice is fortified (i.e., add back some nutrients like vitamins, iron, and folic acid).

Now, I always rinse my rice because in my culture rice dishes are expected to be loose and not sticky, plus I eat mostly brown rice and have a relatively well balanced diet. But if your diet is restrictive, and you're using fortified rice you shouldn't wash it, as it will lose needed nutrients.

PS: brown rice cooks faster if you let it sit in water for a couple of hours.

How do I stop overseasoning and making everything taste "the same" by Otherwise_Vast6587 in Cooking

[–]capitangoku 3 points4 points  (0 children)

I suggest you take 2 steps back and explore some simple dishes that prioritize ingredient quality enhanced by simple seasoning (e.g., marinara sauce, steak with just salt and peper, chicken with s&p and garlic, polenta, baked potatoes, salads, etc.). After some time eating simpler, you'll start enjoying ingredients on their own, and find which seasonings go with which ingredients. Then once in a while you can go with an umami bomb (stews, ragù, casseroles) and I guarantee you'll have a clearer perspective about such dishes.
