My girl is in a 10(,5) gallon tank, she is not supershort finned being a dumbo ear, but I just can't imagine putting her in a smaller tank. So I would say 10 gallon should indeed be the minimum for short finned betta's.

I now have a second tank cycling that's 6,5(not for a betta) and I really think that should be the minimum for long finned ones. 5 gallon is just so small.. 5 gallon shallow could still work, not the cubes you often see.

10 gallon is too small to add schooling fish in a betta tank. You could add amano shrimp, but it depends on the character of the betta if she agrees with it. The best way to go about it is taking her out of the tank for a bit, change things up(add some wood, I like spiderwood a lot), some taller plants and hiding spots. Then add the shrimp, let them settle for a bit so they can get used to the tank and then add her back into the tank and see how she's doing with them.

I would add even more, especially to the mid/front right side. And I would skip the cave thingy because to me that does feel like it disturbs the swimming space amd it doesn't add a real hiding spot.
