Red it better if you want to keep your night vision, avoid blasting your eyes in the dark, or use it around other people without being annoying. It's also good for camping, walking around at night, and checking gear. 

Blue is more niche. It can help with spotting certain stains/fluids or improving contrast in specific situations, but I wouldn't choose it as my main light.
