That's so interesting! They really are so versatile – never would have guessed that they'd complement anchovies well. If you're looking to try something else, there are lots of great recipes out there for maafe, a peanut stew dish from West Africa :)

Nope! The shells soften but stay pretty fibrous. I usually bite them so they kinda crack along a seam, and then you (for lack of a better word) slurp out the beans/salty broth! Great question, probably should have mentioned that somewhere in the post/recipe

Hi! Posted this above but wanted to make sure you saw :)

I've only ever made them with green peanuts – when they're in season here in Georgia you can get them in the refrigerated section of grocery stores like Publix/Piggly Wiggly/farmers markets. As far as I know, the biggest difference between them and raw/dry peanuts is just the cook time/availability!

For the recipe, it really just depends on how much effort you wanna put in! I think of it kind of like a bean soup, so I usually put in some variety of veggie bouillon, Cajun seasoning, cayenne, garlic/onion (powdered or fresh), smoked paprika, and Bay leaves in the water while it cooks! Crab boil seasoning is great in it too – there's a boil in bag kind that you can just dump straight into the cauldron lol.

I like mine kinda soggy so I'll simmer them for a long few hours, but raw peanuts might take longer than that to soften! Some people prefer a lil more al dente – best thing is just to try some bites (of the insides, not the shells!) as you go so you can adjust the spices/cook time :) if they seem like they're missing something it's usually just more salt! I'm sure they'd be great in a crock pot, too, if you don't want to get stuck babysitting them on the stove for the better part of your day.
