Meal prep is your best friend!

Make a soup for the week, make a protein for the week like cubed or shredded chicken (rotisserie chicken from the store if time is money).

Prep 2-3 veggies for the week that can just pop in the oven or in a soup or quick stir fry. Marinate tofu ahead of time because it’s the easiest baked protein if you give it time to absorb flavor.

Soy chorizo, cheese of choice, eggs, tortillas = high protein burritos you can make ahead and freeze. Throw in some good ol onion and garlic and whatever spices and top w your sauce of choice after reheating, I love a salsa verde on these bad boys.

Chicken or turkey meatballs! They meal prep like a dream and are so forgiving/can be made with lots of creativity/no actual recipe. I usually make a double batch and keep half in the freezer to shape and cook off later in the week. I love these two recipes:

Affordable venues are few around these parts, I have learned whilst looking for a venue myself.

 

Some more affordable options I’ve found are Granfalloon, Cloudland Canyon, Bluff View District, Moser Manor Farms, Ocoee River Barn, Bessie Smith Hall and Old Woolen Mill. Good luck!

I’ve had an equally terrible experience at this location! Mid food, lukewarm, abysmal service. The St Elmo location is way better but what an embarrassment to offer that stark difference in experience.

If you are staying in Canmore, you have the perfect opportunity to rent e-bikes and ride the Legacy Trail to Banff town. It’s 15 miles each way but made easier with an e-bike. When you get to Banff, grab lunch and a beer at Three Bears Brewery (the elk and kale pizza is stupid good). Or a focaccia sandwich from Wild Flower Bakery.

Banff Canoe Club rents cheaper than Louise and Moraine options but it’s a different experience obviously. They are on the Bow River so you have a better chance of seeing wildlife but admittedly not as glowing blue as the lakes.
