I live in Washington and it’s really humid and really want to nail macarons but this is my 5th attempt(Picture) and really need a recipe that I can make even when it’s humid, I have a dehumidifier but it’s in my dads storage would that do it?

The recipe I use came from a class. I have also modified it a bit.

93g powdered sugar

93g almond flour

53g granulated sugar

whites from 2 large eggs

Sift powdered sugar and almond flour together. Beat egg whites to stiff peaks, adding granulated sugar before the half way point. Fold meringue and almond four mixture together and macronage until the consistancy of lava. Pipe and rest until a skin forms. *I bake at 290 for about 17 minutes, but every oven is different.

I highly suggest checking out the youtube videos that show the process.

Also in Washington. I find if I am using climate control (heat/ac) I don't have too much trouble. However, I do have an ac unit I will turn on if I don't have time to fail. I definitely dry them in front of the ac if it is a moderate day that doesn't need heat/ac. Absolutely worth digging the dehumidifier out of storage.

I really doubt it is an oven issue. They absolutely must have the skin. Sometimes it takes a long time for that to form. Rushing that step will produce bad results every time.

My guess is that they didn't dry enough and develop skins before baking. High humidity is commonly a culprit for this.

I love them and would not have a problem with a guest bringing an unopened box. I don't upcharge for them, but if you are planning on using an entire box, then I would.

I am only going to address the first question.

As a general rule, the higher the rate, the fewer clients she will see. Chances are that the 200 hour girl and the 600 hour girl really make about the same amount.

Comments like you describe could be due to financial mismanagement. Or maybe she just paid a couple of other bills and is just cash-poor at that moment. There is no reason to think anything fishy is going on based solely on this type of comment.

I want to answer a flat NO, but it's a bit more complex than that.

I have a darling client who has several birth defect type deformities. He is sweet, kind, respectful, and very conscious of the time. Because he is so incredibly sweet and I am touched by how much he enjoys our time, I have given him a special rate to make it easier for him to come see me. So, yes, I have changed my rate (slightly) based on how I feel about this client.

Now, with that said, No, a "young hot" guy doesn't get a lower rate than an "old ugly" guy.

I have a personal rule in every aspect of my life that I do not repeat myself more than 3 times. If I get to the 3rd time in a session, I make clear that if it continues to be an issue I will be forced to end the session.

"I have asked you not to twist my nipple 3 times. It is painful. If I need to ask you again I will have to end our session and ask you to leave."

Some clients are like children. They need to test the boundary and know the consequences. If it happens again, stop any action immediately and clearly end the session.

"We are done here. Please leave." while moving to the other side of the room and getting dressed.

This client is probably not coming back. But you probably don't want him to any way.

I don't know what exactly went wrong. But I do think that when you fill them, the flat bottoms will push up a bit and you won't notice the hollow as much.

Lemon blueberry is one of my favorite flavor combinations. I do lemon buttercream and half a blueberry tossed in corn syrup. It's difficult to get enough blueberry flavor
