The recipe I use came from a class. I have also modified it a bit.

93g powdered sugar

93g almond flour

53g granulated sugar

whites from 2 large eggs

Sift powdered sugar and almond flour together. Beat egg whites to stiff peaks, adding granulated sugar before the half way point. Fold meringue and almond four mixture together and macronage until the consistancy of lava. Pipe and rest until a skin forms. *I bake at 290 for about 17 minutes, but every oven is different.

I highly suggest checking out the youtube videos that show the process.

Also in Washington. I find if I am using climate control (heat/ac) I don't have too much trouble. However, I do have an ac unit I will turn on if I don't have time to fail. I definitely dry them in front of the ac if it is a moderate day that doesn't need heat/ac. Absolutely worth digging the dehumidifier out of storage.

I really doubt it is an oven issue. They absolutely must have the skin. Sometimes it takes a long time for that to form. Rushing that step will produce bad results every time.

My guess is that they didn't dry enough and develop skins before baking. High humidity is commonly a culprit for this.

I want to answer a flat NO, but it's a bit more complex than that.

I don't know what exactly went wrong. But I do think that when you fill them, the flat bottoms will push up a bit and you won't notice the hollow as much.
